Marben 2.0 calls itself a “farmhouse revival.” The chef, Carl Heinrich, worked until recently with in-house butcher Ryan Donovan at Cowbell. Together they have put a menu based on Ontario meat and produce that honours the producers of the ingredients, such as “Denise's pork belly” and “Dennis' roast beef,” supplied by Denise and Dennis Harrison of Dingo Farms in Bradford.
