The aptly named resto reflects Scott's goal to create a seasonal menu consisting of local meats and produce. The menu is just that, with vague descriptions of proteins that stay the same (pork, beef, duck and elk, to name a few), but the cooking process and cuts of meat change weekly. Scott showcases in-season fruits and veggies, like the tomatoes and herbs grown on his back patio and the corn bought from a neighbourhood farmer’s market.

"It's always really nice to be able to walk upstairs with a pair of scissors and clip some fresh herbs, rather than opening up a bag," Scott says.

Even the beers are homegrown, with ales from Barrie, Vanleek and St. Thomas. The only non-Ontario beer is the St. Ambroise Oatmeal Stout from Montreal. The wine list is the first Scott has ever created and there are more VQA wines being added. Scott lists his drink and food suppliers on his website in an effort to teach hungry city dwellers what can be found in their own backyards.

"The menu is a continuing education process that really highlights what Ontario has to offer," he says.
